At the small council Tyrion said there was 6 kingdoms.

You have Dorne, Arryn, Baratheon, Tully, Kings Landing, and the 6th?

Greyjoys, Lannisters, Tyrells lost most of their men but the Kingdoms are still there full of people?

Bronn took Highgarden, and presumably Tyrion kept the Lannister areas.

Also, Arryn and Tully are the same thing, yes?

But adding Highgarden and Casterly Rock would make 7.

They're different, tully's are from riverrun and arryn from the vale.

Arryn and Tully are not the same. Arryn is  the Vale, Tully  is the riverlands

Presumption on your part.

Clearly can smell Jons scent on the dagger

Two presumptions on your part.
1. He can smell Jons scent.
2. It knows what the dagger is.

Potholes filled.

Humorously enough, there are essentially 9 "provinces" in Westeros. It's called the 7 kingdoms because that was how many there were at the time of the conquest. But this did not include the iron islands, which was part of the river lands at the time, nor the crownlands.

The Iron Islands aren't their own kingdom, they're vassals to the Riverlands

They aren't any more. That ended with aegon. But at the time of the conquest, they were vassals of the riverlands
