Because good defense in playoff will take away your big plays, (so comes 'defense wins championships'), that is why you need balanced offense to win championship.

High flying offense is fundamentally flawed in that they are incapable of making adjustments based on what is given. That is not a problem in regular seasons as the team can afford losing one out of every 3 or 4 games.

I don't think it's the defense, I think it's the pressure of the situation. This is why the Falcons had a guy tryna bang a hooker the night before Super Bowl, the Raiders had a guy jump the border and do 55 tequila shots in Mexico before a Super Bowl. The plane trip is not normal, the practices are not normal, media days are not normal. It's too much for some guys to handle. 

There's just no way for a regular guy to prepare for this level of attention and pressure. Held in a neutral stadium that's not overly loud from fan cheering because many people there are fans of the event not either team.

It’s reminiscent of basketball teams who rely on 3s and baseball teams who rely on home runs. 

High octane NFL offenses are dependent on big plays, forcing them to take checkdowns, creating 3rd and long consistently and also forcing them to make quick reads throws them off balance. 

In basketball the equivalent is making them take a long 2, in baseball it’s forcing a team to manufacture a run(0 out double, bunt, 1 out sac fly)

Most teams aren’t built to beat you multiple ways, coaching has a lot to do with it.

Last, defenses know what’s coming at this point. Most offensive coaches aren’t going to switch because what they’ve done has got them there. Why would McVay go away from what worked all year for him? Also consider that he prettt much made decisions for Goff all year but couldn’t as he adjusted his gameplan and Goff was out of sync because of it. Belichick is smarter than him by miles. He and McDaniels tried multiple things until they found what worked on a single drive which was all they needed.

Typically in football you have formations and plays that are kept locked up until late in the year. Frankly coaches making the playoffs save them for the Super Bowl unless they have to use them. Belichick has the largest playbook perhaps in NFL history but most coaches who get that far have a lot to consider. Now if you look at the best offenses over the years that made the big dance, their production typically declined as the year went on. The 18-0 Patriots are the perfect example of this. Belichick in essence really threw out the kitchen sink against the Giants Week 17 to get that 16-0. They did well against Jacksonville but really just coasted dry against the Chargers and then of course the Super Bowl.

It's the same reason league leading passers have NEVER won the Super Bowl despite several appearances at 0-6 (you'd have to go back to Unitas 1959 to find an NFL Champion).
