Agreed on the mood aspect.  

Honeycrisp is tops for me, but is typically available in fall.  

Gala is more widely available and consistent in crispness, sweetness. 

Granny Smith are good in some salads and with some party snack dips

McIntosh is my go to for baking apple crisp.
