I agree, there are some really good coaches out there, plus this isnt the same league is was back in the 70's, this is graduate level football nowadays. Teams spend nights/mornings trying to find a weakness and will exploit every one of them.

Also teams just have off days as well, These guys aren't as mentally strong as they were back in the 70 even up until the early-mid 2000's.

Yep. No team is just getting the ever-loving shiz beaten out of them every single week. The margin for error is so small in the NFL that even the best teams can lose to the worst without it ever being unconceivable. Like, would anyone be utterly shocked if the Texans beat the Eagles? It's not supposed to happen, but if they played each other 10x, the Texans probably win 2/10.

The '72 Dolphins win in the Super Bowl was more important because it was their first-ever Super Bowl victory. The 17-0 part was icing on the cake and very cool but the actual SB title was much more important. As the Patriots proved, nobody cares about regular-season records if you choke in the big game. 

Funny how modern NFL fans don't understand how the rotating playoff game-sites worked back then...the undefeated Dolphins had to go on the road in the AFC Championship game in cold Pittsburgh, against Chuck Noll, Terry Bradshaw, Franco Harris, Mean Joe Greene, L.C. Greenwood, Dwight White, Jack Ham, Henry Davis, Andy Russell, Mel Blount, Mike Wagner....

It could happen again, all it takes is a run of luck.
