Need comments, concerns, questions, feedback.

This is all preliminary, nobody get too worked up.

Can cut down seafood and poultry if we want beef and pork to knock each other down a bit first.

See I see it the other way around.

If I'm cooking brisket, I'm gonna spend at least $40 for a huge slab of meat, usually closer to $60. And I'm setting up the smoker at midnight before I go to bed to let everything start smoking overnight, I can't really leave the house for too long until dinner the next night. I don't want to do all that work for a small brisket.

Prime rib I can just buy a 1, 2 or 3 bone rib for under $40 and throw it on the grill or in the oven that night with no planning.

If you are smoking brisket, you are making enough for at least a week. If not 2-4. Prime Ribs are a one night affair.
