This would be the only justifiable reason to me? Never understood why OL especially OC weren't forced to cross train and become a Long Snapper to save a roster spot.

Has to do with size vs flexibility. They are almost all 240-250 lbs at the very most, 250 is even a little big.  Most offensive lineman are to big-not flexible enough to long snap. Most offensive linemens stomach and legs are to big and get in the way of the full long snapping motion. I think some former TE's have doubled as a LS in the past and do in the college ranks today. 

When they release they are almost bent in half. It takes a good deal of flexibility, can't have a gut.
