No, I just let it smoke without wrapping. If I wrap a brisket, it’s only in butcher paper (aluminum foil makes the brisket too much like pot roast for my liking), but I rarely use it. If you have good wood, put the meat on your smoker at the appropriate time, and have a large enough water pan, you’ll rarely ever need to wrap it. Pastrami is great as long as you have the right ingredients; the most important is prague powder. Without that, you don’t have corned beef or pastrami. I get my beef ribs from a specialty butcher shop (which sells its full packer brisket at $11.99/Lb), but I’ll always get my brisket from Costco because it’s so much cheaper than anywhere else.
