Only other close matchup is Short Loin/Rib (8-10). EDIT: And @FrankRizzo breaks the tie on the pork products and makes it a one point game on the top beef options! I mean, yes, I've gotten a bit over traditional link sausage (it's a struggle to find an Italian deli in SoCal that has a good quality cased Italian sausage; surprising not for just loose/ground Italian sausage), and maybe it's a case of me just getting turned on to other meats in my links (elk sausage is freaking amazing!), sausage on the whole is delicious. Stinky, greasy, constipated kings, but we loved every minute of it There's a restaurant not-so-near me (it's on the other side of Malibu, so technically still SoCal but, with LA traffic, it's a good 2 hour drive at most times of day to get there) that regularly has oak-grilled elk chops on the menu and they're among the Top 10 things I've ever eaten. And this is one of those places that purposefully doesn't have a freezer so all the meats are fresh. They got featured on one of those "Food Paradise" episodes on Travel Channel and I was so upset when that happened, because that just means it's more difficult to get an early evening reservation (which you want the early ones since when the run out of something, they're out and you're screwed). I'm not a fan of venison usually, but I've never had it prepared by a chef at a restaurant either. I like it as burger or sausage generally. My dad hunted, therefore growing up I hunted a little - mostly when visiting other members of his family that lived in more rural parts of the state and hunted on the regular. One of the best elk preparations I've ever had was actually the heart from a fresh kill stuffed with sausage and breadcrumbs and cooked in a Dutch over over a campfire. it sounds nasty to people who don't usually eat ofall, but it's astoundingly amazing. My dad hunted but just gave the meat to my uncle, he just liked going out with them, he never liked it and nobody else in the family really did either. I only ever hunted small game, and I’ve eating tons of small game, so that’s what I prefer to venison lol. Not that I eat either often at all (every few years now, maybe couple times a summer as a kid) Yeah I’m good with offal though. Organ meat is underrated. skewered chicken hearts wrapped in bacon were a campfire tradition in the summer growing up.
