Ignorant question on my part, but:

Aside from spending time outside, what dietary factors help with Vitamin D?

Good sources of vitamin D
  • oily fish – such as salmon, sardines, herring and mackerel.
  • red meat.
  • liver.
  • egg yolks.
  • fortified foods – such as some fat spreads and breakfast cereals.
  • Fortified milk /dairy

My best friend's niece works as a nurse and received the vaccine a week ago. And yesterday she started feeling sick and tested positive for Covid-19.

That's bad timing, sorry to hear that. If it's any consolation, her antibody response should be kicking in imminently (the short end is a week), so she'll have an advantage compared to the average person who gets COVID. Hopefully that results in a more mild case.
