Yes his sack numbers are insane and pretty, and reflect just how unstoppable he is. However, from the interior, you can still be absolutely WRECKING an offense without necessarily showing up in eye-popping sack numbers. To me his sacks are just a positive byproduct of how much mayhem he's causing to the pocket, rather than the bottom line. Panthers were mostly healthy outside of the McCaffrey injury in Week 2. This past week we lost Brian Burns (concussion), Donte Jackson (toe), and Gross-Matos (ankle?). None of them are season-enders or anything though. I don't think that market despite Daks abilities is as big as you seem to think. We're not talking about paying a QB 17-20M, we're talking DBL that per year.
