I consistently used my Instant Pot after I bought it while working at the post office. It made meal planning easy and simple. I could have a full meal made within 10 minutes, or if I wanted to I'd throw everything in in the morning and slow cook and it'd be done by the time I got home. And I only had one pot to clean up unless I made a side dish or something.

I’ve been following him for years. Between his book (which you should absolutely get if you don’t have it), Serious Eats, and now his YouTube channel and NYT articles, his techniques and lessons have permeated the overwhelming majority of things I cook anymore. Even when adapting family recipes and stuff, I find myself “oh this would make it better” and incorporating his stuff into those dishes. He has been an incredible boon for cooking literacy.

Yep got the book along with a sous vide as a birthday present a month ago.  Slowly working my way through it but it's the perfect cookbook for me.  Nothing is overly complex or difficult and I love his scientific approaches to everything.  Just like the article you posted, it's so nice to cook not just following a specific recipe but just general ideas that can apply to dozens of dishes.

you can steam and roast!!!! It definitely seems more versatile then I had I originally thought. I actually asked my brother last night about it and he said he never uses his, so I get a free trial!  Thank you for the links!!

There's so much you can do with the pressure cookers. The Instant Pot is the best rice cooker I've ever owned. We make a lot of soup with ours, but it gets used for a lot of different things. My wife finds a lot of recipes here https://pressureluckcooking.com

I went to the 'Easy Prep' list, of course... the Pesto Chicken Pasta Salad might be the first one I try. There are some interesting recipes on there too: an 'Egg Loaf'? 'Carrot Bacon Chips'?  I'm not fancy like that  hahaha
