New Year: Vegan/Vegetarian

Hi guys!

So we are less than a month from the start of the new year. This always brings a change. Here’s what I’m doing.

My wife and my family don’t think I will last long at this, but I’m challenging myself to go vegetarian (maybe vegan) for the beginning of 2021. I’m HOPING to do this through the first quarter.

One big problem: I hate vegetables. I especially don’t like them cooked but there are many that I will eat raw.

What I need is your vegan/vegetarian recipes and meal ideas. I will update this challenge daily. I’m also hopeful this helps me lose some weight in case I need to get a heart transplant.

Please post some suggestions, and help! Maybe even ideas for if I go out to eat at some chain restaurants or if I order food.

Help me prove them wrong.

I have no tips on vegan stuff (because I could never follow through with that), but I'd recommend trying intermediate fasting if you want to lose some weight. I've been skipping breakfast (just have some black coffee and water) and not eating until lunch and lost about 15 pounds without watching what I eat too religiously. A 16 hour fast isn't as hard as it sounds.

Good luck with the vegan part though!

@JoshstraDaymus good for you with your heart health bro, I'm proud of you and you got this! IMO, if you cook them right, you can get a great eggplant parmesan. If you don't like the way that an eggplant tastes as too "soft/spongy", then I'd suggest finishing it on broil to get it crisp, or doing this:

Simply put, get the moisture OUT OF the eggplant before you cook it with that salt.

If you also use a sautéed mushroom here instead of the chicken it ends up solid as well.

If you are doing your own cooking then sure it can help because you are most likely eating poorly to begin with but vegan/vegetarian is a poor diet for the long run.  You need animal protein and the plant based stuff is so heavily processed it is way worse for you.

My honest suggestion, especially if dealing with heart issues, cut out the chain restaurants and ordering food in.  And eliminate all vegetable oils/canola oil/soybean oil/corn oil, etc.

I rarely order, I don’t like any of those oils I only use olive oil. I actually don’t eat badly at all, but in order to be able to get a heart transplant if I were to need one I need to lose weight.

Also, invest in a food chopper or anything that can really dice up veggies. Put some riced broccoli in with rice and you'll barely notice. Frozen spinach blended into a smoothie with strong flavors (blueberries are a good choice) will also be a good way to get some in too
