Brined them overnight in Kosher salt and brown sugar, smoked them for 3.5 hours, wrapped in aluminum foil lined with brown sugar, honey, and butter, and then back on the smoker for another 1.5 hours. I use my Kamado Joe and while it works great, something about a true offset smoker or drum smoker is just a more enjoyable (although longer and harder) process.
