When you use blue cheese are you just putting crumbles on top of the finished filet or is there more too it?  Something I've really been wanting to try but not sure the best way.

there is none at all. It's ridiculously dummy-proof. Can let it cook for 40min to several hours and it doesn't matter. Set a temp for your desired doneness and wait.

Only real learning curve is mastering how to do a sear quickly after you’re done. But it’s not hard.

I plug them all the time, but seriouseats.com has a good number of recipes as well as tips, tricks and instructions on how to do the best job.
