If I ran a restaurant here in this state looking to run a product. Id look to North Carolina. Its different than Va. But everyone has a taste for it because it gives breaks in the standard and is regional. With many, like myself preferring the NC bases. I dont know your state or if surrounding provides any differences. But Id recommend a regional distributor of a small brand. Develop those regional/area connections with suppliers.
