Part of Road House's charm, even to this day, is how unapologetically 80's it is. And there was no way they were ever going to outdo Patrick Swayze or Sam Elliot. Gyllenhaal is so hit or miss, and even though he may look the part, he just doesn't have that on screen presence to really sell himself in this role. Swayze wasn't the most intimidating guy, but he had an stoic demeanor that Gyllenhaal cant really pull off IMO. Plus, as stated....it was the 80s.
